Spontaneous fermentation of about 7 months in barrique with bâtonnage on noble lees.

Grape variety: trebbiano spoletino 100%

density: 4300 per ha

Cultivation: guyot

Altitude: 380 m a.s.l

Bottles produced: 1.200

Harvest time: Late October until the 12/14 of November. Harvesting of grapes solely by hand in the early hours of the day.

Winemaking: Cold micro-maceration of 24/36 hours on the skins. A light pressing and passage into French oak barrels where it ferments for 1 month at a constant temperature of 13-14°.

Aging: Batonnage in steel for 7 months on noble lees. Once cleaned, it is bottled where it remains for about 3 months.

Serving temperature: 10-12°

Tasting: Straw yellow color the nose releases aromas of tropical fruit and banana on the palate remains fine and intense, fresh and persistent
