The last part of the fermentation takes place in the bottle, as in the old days, “sur lie,” with the bottom without added sugar or yeast. The result is a wine steeped in tradition that embodies the ethos of craftsmanship.


Grape variety: Sangiovese: 100%

density: 4300 per ha

Cultivation: guyot

Altitude: 380 m a.s.l

Bottles produced: 400

Harvest time: Late September with harvesting of the grapes solely by hand in the early hours of the day.

Winemaking: Micro cold maceration on the skins for 24/36 hours, then a subsequent light pressing.Spontaneous fermentation for 20/25 days until a 1.1/2 bubble level is reached.

Aging: Bottled, finishes fermentation in bottle with indigenous yeast deposition.

Serving temperature: 10-12°C

Tasting: Cerasuolo pink color, aroma of fresh rose, wild strawberry.Fresh, balanced palate, pleasantly persistent
