Umbria Sparkling White IGT

Second fermentation in the bottle, as it used to be done, “sur lie,” with the bottom without added sugar or yeast. The result is a wine rich in aroma, freshness and tradition that embodies the ethic of winemaking.

Grape variety: Trebbiano Spoletino: 100%

density: 4300 per ha

Cultivation: guyot

Altitude: 380m a.s.l

Bottles produced: 1.400

Harvest time: late September with grapes harvested by hand exclusively in the early morning hours.

Winemaking: Micro cold-maceration on skins for 36 hours, then light pressing. Spontaneous fermentation for 20/25 days until a bubble level of 1/1.2 is reached. Then bottled where the second fermentation takes place.

Aging: in bottle according to ancestral method with indigenous yeast deposit at the end of fermentation

Serving temperature: 10-12°

Tasting: Bright straw yellow color with greenish highlights. It releases fruity notes of peach and hints of banana and pineapple

Ventibolle, the first sparkling wine from our winery, produced according to the ancestral method with second fermentation in the bottle and indigenous yeast deposition at the end of fermentation.
